Mushroom Ragout Recipe

How to make it:
3 Tbs oil
1 1/2 lbs fresh white mushrooms
1 large diced onion
1 1/2 tsp Italian seasoning
3/4 tsp salt
1 can (14.5 ounces) stewed tomatoes
1 can (15 to 19 ounces) white beans,
drained
1/2 cup Parmesan cheese, divided
In a large skillet over medium heat, heat oil until hot.
Add mushrooms, onions, Italian seasoning and salt; cook
until tender, stirring occasionally, about 12 minutes.
Add stewed tomatoes and white beans to skillet, heat
through, stir in 1/4 cup of parmesan cheese and serve over
pasta. Sprinkle the remaning cheese over the top of the
dish.
